Our History
Friends kept calling. People were wondering. Everyone was missing the great taste and style of Peggi Whiting, master sushi chef extraordinaire and the former impresario of Ichiban Sushi, Salt Lake City's nationally renowned sushi restaurant.
Once upon a time, Peggi trained with Master Inou, a legendary sushi chef in Japan. Her mentor taught her well. She launched the original Ichiban Sushi in Park City in the late '80s. And she ran the restaurant for nearly 18 years, working six, seven days a week, even after a successful move to Salt Lake City in 1998.
She was renowned, celebrated and recognized. Her customer base was large, and loyal. Her restaurant was highly touted by Zagat's and other food and tourism guides. She even created her own original line of sauces, Seal Sama.
But for Peggi, it was time to try something new. In the spring of 2008, co-owner and business partner Keith Guevara approached Peggi with a novel concept for a drive-thru sushi and Japanese restaurant. Peggi loved the concept and HayaiZushi was born.
